I would never have imagined I’d select a Champagne cocktail as my second entry! But my wife loved this so much I am posting this just for her. This is an amazing summertime refreshing cocktail but don’t be fooled, this cocktail is not for the faint of heart! The Gin in this recipe provides a sneaky punch.

Typically you will use a Sparkling Wine for cocktails like these but here in the South Bay we are lucky enough to have an very unique winery in the hills of Gilroy that carries a actual Champagne. The winery is called Kirgin Cellars and they have been around since 1916 which is before Champagne could only be named that if it came from the Champagne region of France. This Grand Cuvee works beautifully with this recipe. Enjoy!

For this cocktail use a Champagne flute. Add the ice cubes at the end.

  • 3 oz Champagne or Sparkling Wine
  • 1 oz Lemon Juice
  • 1 oz Gin (Hendricks is my fav)
  • 1/2 oz Simple Syrup
  • Add a handful of ice cubes and give a gentle stir
  • Optional: Garnish with a lemon peel
