This amazing cocktail is perfect for summer when you want something refreshing but not your typical super sweet poolside drink. This beauty has plenty of exotic flavor, is refreshing and packs a good punch. I’ve once had to make this without the mint leaves and substituted just a tiny bit of creme de menthe but I don’t recommend doing that at all. The muddled mint and mint leaf garnish makes a big difference.
- 2 oz Rye
- 3/4 oz Aperol
- 1/4 simple Syrup
- 4 lemon wedges (cut a lemon in half then take 1 half and slice it into 4 wedges)
- 5 Mint leaves (1 for garnish)
Directions
- Add the mint leaves and lemon wedges and muddle thoroughly
- Add the rest of the ingredients
- Add ice and shake
- Use a strainer to pour because the lemon pulp will block a typical shaker
- Take one mint leaf in your hand and slap the leaf really hard (I know this sound stupid but the impact really bring the mint aroma out)
- Garnish with the min leave above
